This muffin recipe is very versatile and is healthier then most of the ones that I've found!

Ingredients For coconut oil muffins

  • 1 1/2 c
    all purpose flour
  • 1 c
    quick cooking oats
  • 1/2 c
    sugar
  • 1 Tbsp
    baking powder
  • 1 c
    milk
  • 1/4 c
    coconut oil
  • 1
    egg, beaten
  • 1 tsp
    vanilla extract
  • 1/4 c
    raw pumpkin seeds
  • 1/4 c
    golden raisins
  • 2 tsp
    cinnamon

How To Make coconut oil muffins

    Preheat oven to 400 and spray muffin tin with non stick spray.

    Mix flour, oatmeal, sugar and baking powder in a medium bowl. Microwave milk so it's just to room temperature and mix with oil and egg in a small bowl (you want the egg and milk close room temp so the oil won't harden up). Add vanilla and mix into the dry ingredients.

    Fold in the pumpkin seeds, raisins and cinnamon, being sure not to over mix. Divide batter evenly in muffin tin, bake 15-18 minutes or until a toothpick comes out clean when poked in the center.

    NOTE: You can use any mixture of seeds and dried fruit you like, I also use sunflower seeds and cranberry craisins but omit the cinnamon. And if you don't have coconut oil, vegetable oil can be used.
