chocolate muffin tops

To freeze these, wrap muffin tops in foil, or place in freezer bags; label and freeze. To reheat, microwave at 100%-high about 30 seconds per muffin top. These are so good - I have one for banana muffin tops too!

Ingredients

  • 1 1/2 cups quick or old fashioned oatmeal, uncooked
  • 1/2 cup granulated sugar
  • 1/3 cup margarine or butter, melted-divided
  • 1 1/3 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup cocoa powder
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 large egg, lightly beaten
  • 1/2 cup mini chocolate chips
  • 1/2 cup chopped walnuts

How To Make chocolate muffin tops

  • Step 1
    Heat oven to 400^. Lightly grease a large cookie sheet. Set aside. Combine oats and sugar in a large bowl; mix up good. For streusel topping: Combine 1/4 cup oat mixture and 1 Tablespoon melted margarine in small bowl set aside. For Muffins: Add flour,baking powder and cocoa to remaining oat mixture; mix well. Combine milk,vanilla, remaining melted margarine and egg in a small bowl; mixing well. Add to dry ingredients; mix just until dry ingredients are moistened. Stir in nuts and chips. For each muffin top, drop batter by 1/4 cupfuls onto prepared cookie sheet. (use small cookie scoop). Sprinkle streusel topping evenly over batter, patting gently on. Bake 20-22 minutes, or until golden brown. Serve warm.
