Ingredients

  • 3 1/2 cups all purpose flour
  • 3/4 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 1/2 cups carrot, shredded
  • 1/2 cup yogurt, low-fat, plain
  • 1 large egg
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract
  • 1 cup applesauce, unsweetened
  • 1 tablespoon coconut (optional)

How To Make carrot-applesauce muffins

  • Step 1
    Preheat oven to 400*. Lightly grease regular-sized muffin tin.
  • Step 2
    Combine dry ingredients. Add carrots and blend. Stir together yogurt,oil,vanilla and applesauce. Stir the liquid ingredients into the dry, just until moistened.
  • Step 3
    Spoon into tins. Sprinkle top with coconut. Bake 20-22 min. ( each muffin: 232 calories, 5.34 grams fat, 1.86 grams fiber) Enjoy!
