1/4 tsp
baking soda
1/4 tsp
salt
1/2 tsp
cinnamon
1/2 tsp
ginger
1/4 tsp
nutmeg
1/8 tsp
cloves
1 1/2 c
carrot, shredded
1/2 c
yogurt, low-fat, plain
1 large
egg
1/4 c
canola oil
1 tsp
vanilla extract
1 c
applesauce, unsweetened
1 Tbsp
coconut (optional)

How to Make Carrot-Applesauce Muffins

Step-by-Step

  • 1Preheat oven to 400*. Lightly grease regular-sized muffin tin.
  • 2Combine dry ingredients. Add carrots and blend. Stir together yogurt,oil,vanilla and applesauce. Stir the liquid ingredients into the dry, just until moistened.
  • 3Spoon into tins. Sprinkle top with coconut. Bake 20-22 min. ( each muffin: 232 calories, 5.34 grams fat, 1.86 grams fiber) Enjoy!
