Ingredients
- 3 1/2 cups all purpose flour
- 3/4 cup sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/8 teaspoon cloves
- 1 1/2 cups carrot, shredded
- 1/2 cup yogurt, low-fat, plain
- 1 large egg
- 1/4 cup canola oil
- 1 teaspoon vanilla extract
- 1 cup applesauce, unsweetened
- 1 tablespoon coconut (optional)

Step 1Preheat oven to 400*. Lightly grease regular-sized muffin tin.

Step 2Combine dry ingredients. Add carrots and blend. Stir together yogurt,oil,vanilla and applesauce. Stir the liquid ingredients into the dry, just until moistened.

Step 3Spoon into tins. Sprinkle top with coconut. Bake 20-22 min. ( each muffin: 232 calories, 5.34 grams fat, 1.86 grams fiber) Enjoy!
