Ingredients
- 1 1/2 cups self rising flour
- 1 1/4 cups unsweetened applesauce
- 1 tablespoon honey
- 1/2 cup finely shredded carrots
- TOPPING
- 1 tablespoon sugar
- 1 1/2 teaspoons cinnamon
How To Make carrot applesauce muffins

Step 1Preheat oven to 350 degrees F. Line a muffin pan with 6 paper liners.

Step 2Combine flour, applesauce and honey in a medium bowl until flour is completely incorporated.

Step 3Fold carrots in until evenly distributed.

Step 4In a small bowl, combine sugar and cinnamon for sprinkling.

Step 5Scoop batter into muffin pan. Sprinkle with cinnamon sugar.

Step 6If using a 12 muffin tin, add water to the empty spots.

Step 7Bake 25-30 minutes until lightly browned and done.

Step 8Cool in pan 5 minutes. Remove to cooling rack.
