My sister, Carolyn, gave me this recipe. She is all about any muffin that has a streusel topping. These muffins are moist and delicious!

  • 2 1/2 c
    all purpose flour
  • 2 c
    white sugar
  • 1 Tbsp
    cinnamon or pumpkin pie spice
  • 1 tsp
    baking soda
  • 1/2 tsp
  • 2 large
  • 1 tsp
    vanilla extract
  • 1 c
    pumpkin puree
  • 1/2 c
    vegetable oil
  • 2 c
    finely chopped or grated apple (peeled)

  • 1/4 c
    brown sugar, firmly packed
  • 2 Tbsp
    all purpose flour
  • 1/2 tsp
  • 4 Tbsp
    cold butter cut up

How to Make Carolyn's Pumpkin Apple Muffins


  1. Mix the dry ingredients together and set aside. Combine the eggs, vanilla, pumpkin, vegetable oil and chopped apple until well mixed. Gradually add the dry ingredients until well combined but don't overmix.
  2. Divide batter between 18 muffin tins lined with muffin papers or VERY well greased.
  3. For the topping, work all ingredients together until it forms a coarse meal texture. Sprinkle a teaspoon or two over each muffin until it is all used up.
  4. Bake at 350 degrees for 25 to 30 minutes.
