carolyn's pumpkin apple muffins
My sister, Carolyn, gave me this recipe. She is all about any muffin that has a streusel topping. These muffins are moist and delicious!

Ingredients
- FOR THE MUFFINS
- 2 1/2 cups all purpose flour
- 2 cups white sugar
- 1 tablespoon cinnamon or pumpkin pie spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 cups finely chopped or grated apple (peeled)
- FOR THE STREUSEL TOPPING
- 1/4 cup brown sugar, firmly packed
- 2 tablespoons all purpose flour
- 1/2 teaspoon cinnamon
- 4 tablespoons cold butter cut up
How To Make carolyn's pumpkin apple muffins

Step 1Mix the dry ingredients together and set aside. Combine the eggs, vanilla, pumpkin, vegetable oil and chopped apple until well mixed. Gradually add the dry ingredients until well combined but don't overmix.

Step 2Divide batter between 18 muffin tins lined with muffin papers or VERY well greased.

Step 3For the topping, work all ingredients together until it forms a coarse meal texture. Sprinkle a teaspoon or two over each muffin until it is all used up.

Step 4Bake at 350 degrees for 25 to 30 minutes.
