I just love this Broccoli Cornbread with a big bowl of red beans and a pork chop.

Ingredients
- 2 boxes jiffy cornbread mix
- 1 cup cottage cheese
- 2 sticks butter or margarine melted
- 4 - eggs beaten
- 1 large onion chopped
- 1 - 10 oz. package of chopped broccoli (thawed and drained)
How To Make broccoli cornbread

Step 1Combine all ingredients and pour in muffin tin until about 2/3 full.

Step 2Bake at 375 for about 40 minutes or until a knife inserted into the middle comes out clean.

Step 3*You can also cook these in a greased 9X13 pan.
