These moist and yummy muffins are healthy enough to grab in the morning for breakfast on-the-go! (Recipe was adapted from Lighter Banana Muffins - Allrecipes)

  • 4 - bananas, very ripe
  • 2 - eggs, beaten
  • 1/2 cup applesauce, unsweetened
  • 1/2-1 teaspoon vanilla
  • 2 cups whole wheat flour
  • 1/2 cup white sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon

How To Make breakfast banana muffins

  • Step 1
    Preheat oven to 350 degrees F (175 degrees C). Lightly grease or line 12 muffin cups.
  • Step 2
    Mash bananas and combine with eggs, applesauce, and vanilla. In a separate bowl, mix together the remaining ingredients. Stir the banana mixture into the flour mixture.
  • Step 3
    Pour the batter into muffin cups till it almost reaches the top. Bake for 20-25 minutes.
