I found this recipe awhile ago. These bran muffins are yummy! The recipe makes 24 muffins. I usually cut it in half and make a dozen for my family of 4.

Ingredients

  • 3 c
    unprocessed wheat bran
  • 1 c
    brown sugar
  • 1 c
    boiling water
  • 1/2 c
    softened butter
  • 2 1/2 c
    flour
  • 2 tsp
    baking soda
  • 1 tsp
    salt
  • 2
    eggs, beaten
  • 2 c
    buttermilk

How to Make Bran Muffins

Step-by-Step

  1. Mix 1 cup of wheat bran with 1 cup of boiling water. Stir and let sit so bran absorbs the water.
  2. In a separate bowl, blend sugar and butter. Set aside for later.
  3. In a separate bowl, measure and combine flour, baking soda, and salt. Combine the beaten eggs with the moistened bran. Add it to the flour mixture.
  4. Add the remaing 2 cups of bran, buttermilk, and blended sugar-butter mixture to the flour mixture. Stir until well blended.
  5. Spoon into prepared muffin pan (for moister muffins, use a muffin baking cup) and bake at 400 degrees for 15 minutes.
