bran muffins
I found this recipe awhile ago. These bran muffins are yummy! The recipe makes 24 muffins. I usually cut it in half and make a dozen for my family of 4.

Ingredients
- 3 cups unprocessed wheat bran
- 1 cup brown sugar
- 1 cup boiling water
- 1/2 cup softened butter
- 2 1/2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 - eggs, beaten
- 2 cups buttermilk
How To Make bran muffins

Step 1Mix 1 cup of wheat bran with 1 cup of boiling water. Stir and let sit so bran absorbs the water.

Step 2In a separate bowl, blend sugar and butter. Set aside for later.

Step 3In a separate bowl, measure and combine flour, baking soda, and salt. Combine the beaten eggs with the moistened bran. Add it to the flour mixture.

Step 4Add the remaing 2 cups of bran, buttermilk, and blended sugar-butter mixture to the flour mixture. Stir until well blended.

Step 5Spoon into prepared muffin pan (for moister muffins, use a muffin baking cup) and bake at 400 degrees for 15 minutes.
