I found this recipe awhile ago. These bran muffins are yummy! The recipe makes 24 muffins. I usually cut it in half and make a dozen for my family of 4.

unprocessed wheat bran
1 c
brown sugar
1 c
boiling water
1/2 c
softened butter
2 1/2 c
2 tsp
baking soda
1 tsp
eggs, beaten
2 c

How to Make Bran Muffins


  • 1Mix 1 cup of wheat bran with 1 cup of boiling water. Stir and let sit so bran absorbs the water.
  • 2In a separate bowl, blend sugar and butter. Set aside for later.
  • 3In a separate bowl, measure and combine flour, baking soda, and salt. Combine the beaten eggs with the moistened bran. Add it to the flour mixture.
  • 4Add the remaing 2 cups of bran, buttermilk, and blended sugar-butter mixture to the flour mixture. Stir until well blended.
  • 5Spoon into prepared muffin pan (for moister muffins, use a muffin baking cup) and bake at 400 degrees for 15 minutes.
