This is a simple and healthy choice for a quick breakfast. This recipe, which uses a whole cup of bran cereal, provides a healthy dose of fiber, which means a more mild effect on your blood sugar.

  • 1 c
    bran cereal, all-bran or fiber one
  • 1 1/2 c
    mashed banana or unsweetened applesauce
  • 1/4 c
    fat-free milk
  • 1 c
    whold wheat flour
  • 1/2 c
    old fashioned oats
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1 Tbsp
  • 2 Tbsp
    dark molasses
  • 1 tsp
  • 2 medium
    egg whites or 1 whole egg
  • 2/3 c
    blueberries or 1/4 cup craisins

How to Make Bran Muffins


  1. Preheat oven to 400 degrees F. Spray two 12 cup muffin pans with cooking spray or insert paper liners.
  2. Combine the cereal, banana, and milk in a large bowl. Let stand for about 5 minutes.
  3. Add the flour, oats, baking powder, baking soda, honey, molasses, cinnamon, egg whites, and blueberries and stir until combined. Spoon the batter into the pans and bake for 20 minutes.
