This is a healthier version of a pumpkin muffin. I must admit it is very dense in texture. I honestly don't remember where I got the recipe but my family enjoys them on a semi- regluar basis. Hope you do also.

1 box
spice cake mix (perferably, but chocolate also works.)
1 can(s)
pumpkin puree
1 or 2
eggs (optional)


1Preheat oven to 350.
2Mix cake mix and pumpkin puree together. It takes a while, so don't give up on it. After mixed smooth and you still think it is too thick, you may 1 or 2 eggs to lighten batter.
3Fill muffin pan with liners and fill liners 3/4 full. Bake until knife point comes out clean, usually 30 to 45 mins depending on your oven.
4Cool before serving. (They get really hot and stay that way for a long while. I learned the hard way. :))
