Came by this in a book called A Skillet full..I made a few minor changes to this..It is a big hit with my boys...

    real butter
  • 2 clove
  • 1/2 c
    bell pepper,choped fine
  • 1/2 c
    onion,diced fine.
  • 1 c
    chopped ham.
  • 1 c
    cooked sausage,chopped
  • 1/2 c
    bacon, cooked,chopped.
  • 1 c
    yellow cornmeal
  • 1 1/4 c
  • 2 tsp
    baking soda
  • 1 tsp
  • 2 large
  • 2 c

How to Make Bob W's Ham and Sausage Muffins


  1. In a cast iron skillet cook peppers,garlic, and onion till soft..Remove and set a side..
    In a large mixing bowl shift cornmeal,flour,soda and salt..
    In another mixing bowl beat eggs and stir in buttermilk..
  2. add egg mixture to flour mix stirring untill blended..Do not over stir..
    Now fold in ham,bacon,sausage,peppers,onions,and garlic and any butter left in skillet..
  3. Spray a muffin pan with cooking spray. Fill muffin pan abought 2/3 full..Bake in pre-heated oven at 400 for 30-35 minutes.Makes abought 24 muffens.
