  • 2 c
    all purpose flour
  • 2 tsp
    baking powder
  • 1/4 tsp
    baking soda
  • 1/4 tsp
  • 3/4 c
    white sugar
  • 2 tsp
    grated lemon rind
  • 1 1/2 c
    fresh or frozen blueberries
  • 3/4 c
  • 1/4 c
    vegetable oil
  • 1 large

  • 1/3 c
    uncooked regular oats
  • 3 Tbsp
    light brown sugar
  • 1 Tbsp
    low-calorie margarine
  • 2 Tbsp
    almonds, slivered

How to Make Blueberry-Oat Streusel Muffins


  1. Combine dry muffin ingredients in large bowl; add blueberries & toss gently. Set aside.
  2. Combine together: buttermilk, oil, and slightly beaten egg; add to dry ingredients, stirring until dry ingredients are moistened. Note: dough will be stiff.
  3. Spoon batter into muffin tins coated with cooking spray. (I line muffin tins with paper cupcake holders) Fill 2/3 full.
    Toss together streusel ingredients (margarine should be room temperature or can be melted first) Sprinkle evenly on top of muffin mixture prior to baking.
    Bake at 400 degrees for 15-20 minutes.
