Makes 1 dozen
Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup white sugar
- 2 teaspoons grated lemon rind
- 1 1/2 cups fresh or frozen blueberries
- 3/4 cup buttermilk
- 1/4 cup vegetable oil
- 1 large egg
- STREUSEL
- 1/3 cup uncooked regular oats
- 3 tablespoons light brown sugar
- 1 tablespoon low-calorie margarine
- 2 tablespoons almonds, slivered
How To Make blueberry-oat streusel muffins

Step 1Combine dry muffin ingredients in large bowl; add blueberries & toss gently. Set aside.

Step 2Combine together: buttermilk, oil, and slightly beaten egg; add to dry ingredients, stirring until dry ingredients are moistened. Note: dough will be stiff.

Step 3Spoon batter into muffin tins coated with cooking spray. (I line muffin tins with paper cupcake holders) Fill 2/3 full. Toss together streusel ingredients (margarine should be room temperature or can be melted first) Sprinkle evenly on top of muffin mixture prior to baking. Bake at 400 degrees for 15-20 minutes.
