These are so yummy with the streusel on top!

Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup white sugar
  • 2 teaspoons grated lemon rind
  • 1 1/2 cups fresh or frozen blueberries
  • 3/4 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • STREUSEL
  • 1/3 cup uncooked regular oats
  • 3 tablespoons light brown sugar
  • 1 tablespoon low-calorie margarine
  • 2 tablespoons almonds, slivered

How To Make blueberry-oat streusel muffins

  • Step 1
    Combine dry muffin ingredients in large bowl; add blueberries & toss gently. Set aside.
  • Step 2
    Combine together: buttermilk, oil, and slightly beaten egg; add to dry ingredients, stirring until dry ingredients are moistened. Note: dough will be stiff.
  • Step 3
    Spoon batter into muffin tins coated with cooking spray. (I line muffin tins with paper cupcake holders) Fill 2/3 full. Toss together streusel ingredients (margarine should be room temperature or can be melted first) Sprinkle evenly on top of muffin mixture prior to baking. Bake at 400 degrees for 15-20 minutes.
