Ingredients

  • 2 c
    all pourpose flour
  • 2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1 stick
    unsalted butter melted and cooled
  • 1/2 c
    whole milk
  • 3/4 c
    granulated sugar
  • 1/4 c
    light brown sugar
  • 1 tsp
    finely grated lemon zest
  • 2 large
    eggs
  • 1 1/2 c
    blueberries
  • BANANA BUTTER:

  • 6 Tbsp
    unsalted butter at room temperature
  • 1
    very ripe banana sliced
  • 1/2 tsp
    lemon juice
  • ·
    pinch of kosher salt

How to Make BLUEBARRY MUFFINS W BANANA BUTTER FOR MOTHER'S DAY

Step-by-Step

  1. Preheat oven to 375 degrees and fill 12 muffin cups with paper liners.
  2. In a large bowl, whisk the flour and the baking powder, and salt in a medium bowl. whisk the butter with both sugars, lemon zest, and eggs
  3. Add the wet ingredients to the dry ingredients and whisk just until combined. Fold in the blueberries.
  4. Spoon the batter into the muffins cups and bake for 20 to 25 minutes until the muffins are golden brown. Let cool 5 minutes. Unmold and let cool on rack.
  5. TO MAKE BANANA BUTTER;
  6. In a food processor puree the butter, banana, lemon juice, and salt serve with the muffins.
  7. The muffins can be made ahead of time and stored for up to 2 days. The butter can be refrigerated for up to a week.
