Mother's day will be here before we know it. This is the perfect treat for any Mother. I want to wish all mother's a great day.

Ingredients

  • 2 cups all pourpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 stick unsalted butter melted and cooled
  • 1/2 cup whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 teaspoon finely grated lemon zest
  • 2 large eggs
  • 1 1/2 cups blueberries
  • BANANA BUTTER:
  • 6 tablespoons unsalted butter at room temperature
  • 1 - very ripe banana sliced
  • 1/2 teaspoon lemon juice
  • - pinch of kosher salt

How To Make bluebarry muffins w banana butter for mother's day

  • Step 1
    Preheat oven to 375 degrees and fill 12 muffin cups with paper liners.
  • Step 2
    In a large bowl, whisk the flour and the baking powder, and salt in a medium bowl. whisk the butter with both sugars, lemon zest, and eggs
  • Step 3
    Add the wet ingredients to the dry ingredients and whisk just until combined. Fold in the blueberries.
  • Step 4
    Spoon the batter into the muffins cups and bake for 20 to 25 minutes until the muffins are golden brown. Let cool 5 minutes. Unmold and let cool on rack.
  • Step 5
    TO MAKE BANANA BUTTER;
  • Step 6
    In a food processor puree the butter, banana, lemon juice, and salt serve with the muffins.
  • Step 7
    The muffins can be made ahead of time and stored for up to 2 days. The butter can be refrigerated for up to a week.
