betty's lunchbox pizza bread/muffins
A sandwich alternative for lunchboxes. Loaded with pizza favourites this is always a hit with my 4 children and husband. My boys take two to school in lieu of 2 sandwiches. These are good for 2 days and can be frozen and popped into a lunch box frozen and will thaw by lunch time. I normally make a double or triple batch to last the week. Meat can be swapped for other meats such as pepperoni, broken up meatballs, bacon etc. Vegetarian option - forgo meats and add chopped pizza veggies (mushrooms, peppers, onions etc - they are best sauted first in my opinion) use 1 cup in total.

Ingredients
- 1 cup self raising flour or use 2 cups of self raising flour and forget the next 3 ingredients
- 1 cup wholemeal (whole wheat) flour
- 1 teaspoon baking powder
- 1 teaspoon bicarb soda
- 1 cups milk, at room temp. (minus a tablespoon for making bread)
- 1 egg, at room temp
- 1 teaspoon garlic
- 1 teaspoon dried onion flakes
- 2 teaspoons italian herbs (or 1 teaspoon basil and 1 teaspoon oregano)
- 1/2 cup bottled pasta sauce
- 1/2 cup chopped salami
- 1/2 cup chopped ham
- 1/4 cup, chopped olives
- 1/2 cup grated cheese
- 2 tablespoons dried parmesan cheese
- 2 tablespoons vegetable oil
- 1/2 teaspoon pepper
- 2 teaspoons oregano, extra for topping
- 1/4 cup grated cheese, extra for topping
How To Make betty's lunchbox pizza bread/muffins

Step 1Pre-heat oven to 360oF (170oC) and line a 12 hole jumbo muffin tray. Set aside to be needed.

Step 2Mix milk, egg, pasta sauce, garlic and oil until combined in a bowl or measuring jug.

Step 3In a large bowl add everything else and make a well. Pour in the wet ingredients and mix/fold until JUST combined.

Step 4Place spoonfuls of batter into the prepared liners and sprinkle tops with extra cheese and oregano.

Step 5Bake in prepared oven for about 20 - 25 minutes.

Step 6Can be baked into 2 loaves to make pizza bread.
