Everyone likes a recipe that is fast and easy to make but tastes ever so good. Add any fruit to these muffins. Raspberries, blackberries, mulberries, elderberries, blueberries, cranberries, or get creative. Replace some of the flour with an equal amount of cocoa powder for chocolate muffins (1/4 cup).

Tender and not dry at all, these are a great, basic recipe for a muffin that can be customized. It's a versatile recipe to keep on hand. We opted for the apples and raisins version, and it was a great combination. But you can try any variation of fruit you like. They're a great grab-and-go breakfast or a sweet treat with a cup of coffee or tea.

  • BASIC MUFFIN
  • 1 stick salted butter
  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 teaspoons baking powder (if double acting baking powder add 1 1/2 tsp)
  • 1 pinch salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • FRUIT VARIATIONS
  • 2 cups fruit; raspberries, blueberries, cranberries, blackberries
  • APPLE
  • 1 1/2 cups grated apple
  • 2 teaspoons ground cinnamon
  • 1//2 cup raisins
