best blueberry muffins

I own a General store. For fifteen years I have been selling my muffins. Everyone wants the recipe. I have made 40,000+, baking a dozen at a time, and with trial and error have come up with the PERFECT muffin. These are the best and it is the first time I have shared my secret recipe. Another great thing is you can make them in one bowl. Please let me know if this is the best BB Muffin you have ever tasted.

yield 12 Texas Size Muffins or 24 regular size Muffins

Ingredients

  • 6 cups flour
  • 1 3/4 cups sugar
  • 8 teaspoons baking powder
  • 2 teaspoons salt
  • 1 cup cooking oil
  • 1 1/2 cups milk
  • 4 - eggs
  • 1 teaspoon almond extract
  • 4 cups frozen or fresh blueberries (preferrably wymans frozen)
  • 1/3 cup sugar, more or less for muffin tops

How To Make best blueberry muffins

  • Step 1
    Mix all dry ingredients together with whisk. Mix well. Mixture will be"heavier" to whisk when it is mixed well.
  • Step 2
    Make a well in the center of the dry ingredients.
  • Step 3
    Add oil, milk, lightly beaten eggs and almond extract. Carefully mix until all is just moistened. DON'T overstir.
  • Step 4
    Fold in the bluberries. then scoop into muffin tins with cup liners. Either 24 regular size or 12 Texas Style.
  • Step 5
    Top each muffin with sugar just before putting in to bake. As desired. I use agenerous amount and the result is great muffin tops.
  • Step 6
    Place in preheated 375* oven for 35 min. or until golden brown. Oven times may vary.
  • Step 7
    Remove from oven and let cool(if you can)10 minutes, then remove from pans and enjoy!
