Banana/Nut/raisin whole wheat muffins

this is a recipe i have had for a while that I just replaced the eggs with egg replacer to make it vegan. So if you wish use 2 medium to large eggs in it. this is a favorite breakfast of ours when we are having a rushed morning. Awesome breakfast with just a cup of coffee or soy milk.

  • 1/3 c
  • 1/2 c
    honey or agave syrup
  • ·
    egg replacer equivalent to (2 large eggs)
  • 1 tsp
    pure vanilla extract
  • 2
    mashed ripe bananas
  • 1 3/4 c
    whole wheat flour
  • 1/2 tsp
  • 1/4 tsp
  • 1 tsp
    baking soda
  • 1/4 c
    very hot water
  • 1/4 c
    pecans or walnuts
  • 1/4 c
    raisins or crasins
  • ·
    cooking spray

How to Make Banana/Nut/raisin whole wheat muffins


  1. Preheat oven to 400 degrees
  2. Mix honey, oil, eggs, vanilla, mashed bananas, nuts, raisins, cinnamon and salt in a bowl. Mix well
  3. Blend in the whole wheat flour and mix well, so there is no dry flour seen
  4. Add baking soda to 1/4-C of boiling water in a small container
  5. Pour baking soda over the flour mixture and stir until fully incorporated.
  6. Spray muffin tin (12) with baking spray and spoon in mixture
  7. Bake for about 18-20 minutes, check with cake tester to ensure center is done.
