banana/nut/raisin whole wheat muffins
this is a recipe i have had for a while that I just replaced the eggs with egg replacer to make it vegan. So if you wish use 2 medium to large eggs in it. this is a favorite breakfast of ours when we are having a rushed morning. Awesome breakfast with just a cup of coffee or soy milk.

Ingredients
- 1/3 cup oil
- 1/2 cup honey or agave syrup
- - egg replacer equivalent to (2 large eggs)
- 1 teaspoon pure vanilla extract
- 2 - mashed ripe bananas
- 1 3/4 cups whole wheat flour
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/4 cup very hot water
- 1/4 cup pecans or walnuts
- 1/4 cup raisins or crasins
- - cooking spray
How To Make banana/nut/raisin whole wheat muffins

Step 1Preheat oven to 400 degrees

Step 2Mix honey, oil, eggs, vanilla, mashed bananas, nuts, raisins, cinnamon and salt in a bowl. Mix well

Step 3Blend in the whole wheat flour and mix well, so there is no dry flour seen

Step 4Add baking soda to 1/4-C of boiling water in a small container

Step 5Pour baking soda over the flour mixture and stir until fully incorporated.

Step 6Spray muffin tin (12) with baking spray and spoon in mixture

Step 7Bake for about 18-20 minutes, check with cake tester to ensure center is done.
