Ingredients
- 3/4 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 - very large, ripe bananas, mashed
- 3/4 cup sugar
- 1 - egg
- 1/3 cup canola oil
How To Make banana bread muffins

Step 1Pre-heat oven to 350 degrees and line a muffin tin with liners. Set aside.

Step 2Sift together flours, baking powder, baking soda and salt in a small bowl.

Step 3Combine mashed bananas, sugar, vanilla, egg and oil in a large bowl.

Step 4Gently fold the flour into the wet mixture in two batches.

Step 5DO NOT over mix. The key to moist muffins is to mix the batter until it is just combined.

Step 6Divide mixture evenly into the muffin tin and bake for 25 minutes or until a toothpick inserted into the center comes out clean.
