So a loaf of banana bread was not at all appealing. But I made a recipe making banana bread muffins? Who da thunk? They came out sooo yummy.

Ingredients
- 2 1/2 cups whole wheat flour
- 1/2 teaspoon baking soda
- 3/4 cup dark brown sugar packed
- 1/4 teaspoon cinnamon
- 4 - ripe bananas smashed (2 cups)
- 1/2 cup vegetable oil
- 1/2 cup milk
- 2 - large eggs
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla extract
- 3/4 cup walnuts (optional)
How To Make banana bread muffins

Step 1Preheat oven to 425 degrees. Spray muffin pan with non stick cooking spray. Combine flour, soda, brown sugar, and cinnamon in a medium bowl. Set aside.

Step 2Smash bananas in a bowl or 4 cup measuring cup. Whisk together bananas, oil, milk, eggs, salt, and vanilla.

Step 3Make a well in the center of the dry ingredients. Pour in wet ingredients and lightly mix. Until lumpy. Do not overmix or muffins will be heavy and dense. Add nuts at this time if you want.

Step 4Using half cup measuring cup, put muffin mix in muffin pan. Divide accordingly. Once you are ready to bake, place in oven and lower oven temp to 375 degrees. Bake for twenty minutes or until toothpick inserted in center of muffin comes out clean.
