banana applesauce muffins
I made these into mini muffins and baked them a little less. They stuck to my papers so next time I will try spraying the pan instead. I was looking for a banana/apple recipe and this one is really good. The banana flavor is great. It comes from the AMA Family Health Cookbook. The picture I took was better than this...guess I need help uploading pics for my recipes.

Ingredients
- 2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 1/2 cups bananas about 4
- 1 - egg
- 4 tablespoons oil
- 2/3 cup brown sugar, firmly packed
- 1/2 cup applesauce, unsweetened
- 1 teaspoon vanilla extract
How To Make banana applesauce muffins

Step 1In a bowl combine flour, baking powder, baking soda, salt and cinnamon. Mix together.

Step 2In a separate bowl combine bananas and egg, mix til smooth; add oil, brown sugar, applesauce and vanilla. Mix thoroughly.

Step 3Add banana mixture to flour mixture. Mix together, do not over mix. fill muffin pans and bake 375 degree for 22-25 minutes.
