I just made these and they are so yummy and healthy. I think I would add a little more br sugar. Easy to make. I used dried cranberries, peaches, and papayas. I ate one with butter and one with cream cheese, I think honey butter would be good too. I got the recipe from Yahoo videos online.

  • 1/2 c
    dried fruit (blueberries and dried cranberries, & dates)
  • 1 1/2 c
    wheat bran
  • 1/2 c
  • 1/2 c
  • 1/4 c
    turkey bacon cooked and crumbled
  • 2/3 c
    brown sugar
  • 1
  • 1/2 tsp
  • 1 c
  • 2 Tbsp
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp

How to Make Bacon Bran Muffins


  1. Heat oven to 350 deg. Grease muffin pan. Mix bran, flour, soda, baking powder, and salt, add sugar, egg, applesauce, vanilla, and buttermilk.
  2. Mix slightly. FOLD in flax seed, bacon and dried fruit.
  3. Spoon into greased muffin pan and bake 350 deg 20 25 min. Let cool and remove.
