I love muffins. I love them so much. I think the stuff you ware on your hands when its snowing outside are called "muffins" Am wrong but I don't care. I will eat these muffins with coffee & get the "muffins" for my hands to play with the snow.

Ingredients

  • 1-1/2 c
    all purpose flour
  • 1-1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon, ground
  • 1/4 tsp
    baking soda
  • 1 c
    low fat cottage cheese
  • 1 medium
    granny smith apples, peeled, cored & finely chopped
  • 1/2 c
    brown sugar, firmly packed
  • 1/4 c
    oil
  • 1
    egg
  • 1 tsp
    vanilla extract

How to Make Apples Apples Everywhere Apples Cinnamon Muffins

Step-by-Step

  1. Perheat the oven to 400F. In a large bowl mix the flour, baking powder, slat,cinnamon & baking soda. Then set aside. Then mix remaning ingredients in a medium bowl. Add in the flour mixture & stir until moistened.
  2. Then spoon into a greased or paper lined muffin pan. Fill each cup about 2/3 full. (No more or it will ooze out lol.)
  3. Then bake for about 25 mins or until golden brown.
  4. Special Tip: You can use the same recipe & make apple cinnamon scones. By droping 1/4cup size dough on a greased cookie sheet. Makes 10 scones.
