apple muffins with whole wheat blend
Did you ever buy something by mistake? The pancake mix I purchased is the brand I prefer, but I picked up the WHOLE WHEAT BLEND BY MISTAKE...Well, my hubby won't try new things, but I DO! This morning I was cravin a hot muffin with my coffee. Since I like to bake - even before I start other things, "I whipped out the mix, the flour and whatever else grabbed me!"

Ingredients
- 1 cup aunt jemima whole wheat blend pancake mix
- 1 cup all-purpose flour
- 1/3 cup light brown sugar (adjust to suit your taste)
- 2 teaspoons baking powder
- 1 cup buttermilk
- 1/3 cup safflower oil (picture shows wrong oil used)
- 1 large fresh egg
- 1 teaspoon vanilla extract
- 1 - small individual container of applesauce
- 1 - apple, cored,peeled and chopped
- 1 teaspoon cinnamon
- 2 tablespoons good granola, approx. for sprinkling on tops of muffins before baking
How To Make apple muffins with whole wheat blend

Step 1Place muffins cups in a muffin pan (12 medium) and preheat oven to 400 degrees.

Step 2Measure all dry ingredients and place in large mixing bowl.

Step 3Add all liquid ingredients and mix slowly at first, then blend in well.

Step 4Spoon batter into muffin cups and sprinkle granola on top of each.

Step 5Bake in middle of oven for 17-18 mins. checking to be sure they are golden brown and dry to the touch.

Step 6Cool on a rack for a minute or more before you try one!
