I got this recipe years ago from a school collection of recipes for a fund raiser. I've made them in the past and it is really fun to watch them puff up. they are tasty when you fill the pocket with tuna or chicken salad. Hope you enjoy trying this unusual bread recipe

How to Make Pita Pocket Bread

Step-by-Step

  1. put 2 cups flour, yeast, sugar and salt in bowl. Mix
  2. heat water and oil until warm and add to flour and mix with fork.
  3. mix with mixer on low until moist. then mix on medium speed for 3 minutes.
  4. add remaining flour by hand until there is a firm dough. knead for 10 minutes.
  5. cover with plastic wrap and towel. let rest for 20 minutes.
  6. punch it down and divide into 12 parts. shape each into smooth balls.
  7. let rise for 30 minutes
  8. with dusted rolling pin, roll each into 6 inch circles.
  9. baking 3 at a time, place directly on rack of 500 degree oven. bake 3 minutes.
  10. when puffed up and just beginning to brown, remove from oven. cool and enjoy.
  11. I have used half whole wheat flour before.
