pita pocket bread

I got this recipe years ago from a school collection of recipes for a fund raiser. I've made them in the past and it is really fun to watch them puff up. they are tasty when you fill the pocket with tuna or chicken salad. Hope you enjoy trying this unusual bread recipe

12 whole pitas
Ingredients
- 4 1/2 cups flour
- 1 package yeast
- 1 1/2 teaspoons sugar
- 1 1/2 teaspoons salt
- 1 3/4 cups water
- 1/3 cup + 3 tbs vegeable oil
How To Make pita pocket bread

Step 1put 2 cups flour, yeast, sugar and salt in bowl. Mix

Step 2heat water and oil until warm and add to flour and mix with fork.

Step 3mix with mixer on low until moist. then mix on medium speed for 3 minutes.

Step 4add remaining flour by hand until there is a firm dough. knead for 10 minutes.

Step 5cover with plastic wrap and towel. let rest for 20 minutes.

Step 6punch it down and divide into 12 parts. shape each into smooth balls.

Step 7let rise for 30 minutes

Step 8with dusted rolling pin, roll each into 6 inch circles.

Step 9baking 3 at a time, place directly on rack of 500 degree oven. bake 3 minutes.

Step 10when puffed up and just beginning to brown, remove from oven. cool and enjoy.

Step 11I have used half whole wheat flour before.
