Tried this recipe by accident and my family loved it. I had extra okra cut up to fry so I threw it in my cornbread mix.

Ingredients
- 8 medium okra, fresh sliced into 1/4" coins
- 1 cup cornmeal, white
- 1/2 cup yellow cornmeal
- 1 medium egg
- 3/4 cup buttermilk or more if needed
- 1/4 cup canola oil

How To Make okra hoecakes

Step 1Measure dry ingredients and stir with whisk.

Step 2Mix slightly beaten egg, buttermilk,and canola oil together.

Step 3Combine dry and wet ingredients with okra and stir with a spoon to mix well. Let sit for 2 or 3 minutes. Drop by spoonfuls into a hot greased skillet and cook until golden brown. Flip over and away from you. Brown hoecakes on both sides. Serve while warm and enjoy.
