Tried this recipe by accident and my family loved it. I had extra okra cut up to fry so I threw it in my cornbread mix.

  • 8 medium
    okra, fresh sliced into 1/4" coins
  • 1 c
    cornmeal, white
  • 1/2 c
    yellow cornmeal
  • 1 medium
  • 3/4 c
    buttermilk or more if needed
  • 1/4 c
    canola oil

How to Make Okra Hoecakes


  1. Measure dry ingredients and stir with whisk.
  2. Mix slightly beaten egg, buttermilk,and canola oil together.
  3. Combine dry and wet ingredients with okra and stir with a spoon to mix well. Let sit for 2 or 3 minutes. Drop by spoonfuls into a hot greased skillet and cook until golden brown. Flip over and away from you. Brown hoecakes on both sides. Serve while warm and enjoy.
