Tried this recipe by accident and my family loved it. I had extra okra cut up to fry so I threw it in my cornbread mix.

Ingredients

  • 8 medium okra, fresh sliced into 1/4" coins
  • 1 cup cornmeal, white
  • 1/2 cup yellow cornmeal
  • 1 medium egg
  • 3/4 cup buttermilk or more if needed
  • 1/4 cup canola oil
  • OKRA CORNBREAD HOECAKES

How To Make okra hoecakes

  • Step 1
    Measure dry ingredients and stir with whisk.
  • Step 2
    Mix slightly beaten egg, buttermilk,and canola oil together.
  • Step 3
    Combine dry and wet ingredients with okra and stir with a spoon to mix well. Let sit for 2 or 3 minutes. Drop by spoonfuls into a hot greased skillet and cook until golden brown. Flip over and away from you. Brown hoecakes on both sides. Serve while warm and enjoy.
