leftover mashed potato cornbread
I made this last night out of leftover mashed potatoes, it turned out to be very tasty.
Blue Ribbon Recipe
Don't toss leftover mashed potatoes from your holiday meal. Use this recipe to recreate them. More like an old-fashioned hoecake, these are not your ordinary potato cakes. They're a cross between a potato pancake and corn cake. Dense, with a cornbread texture, serve these as a side dish or a snack. Top with a pat of butter for a savory treat or a drizzle of honey for something sweeter.
