I made this last night out of leftover mashed potatoes, it turned out to be very tasty.

Ingredients

  • 1 cup self-rising buttermilk corn meal
  • 1 cup all-purpose flour
  • 1/4 cup oil/meat drippings
  • 2 large eggs
  • 1 1/2 cups mashed potatoes, leftover
  • 1/2 cup chopped onion
  • 2 cups milk
  • cooking oil for frying in a shallow skillet

How To Make leftover mashed potato cornbread

  • Ingredients mixed in a bowl.
    Step 1
    In a large bowl, mix all ingredients together.
  • Spoonfuls of batter in a skillet with oil.
    Step 2
    Spoon into a shallow skillet of cooking oil.
  • Frying both sides of the mashed potato cornbread.
    Step 3
    Fry until golden brown on both sides and the middle is done.
