Hoe Cakes

To me, there is only one way to have cornbread and this is it. Most people today will say fried cornbread; however one of my great-aunts always called it Hoe cakes. I was told during "going west" these were fried on the blade of a hoe on an open fire. I don't know if it is true or if she was just pulling my leg!
Ingredients

·3 cups plain white cornmeal

·1 cup plain flour

·3 tbls. sugar or splenda

·1/2 tsp. salt

·1tbls. baking powder

·1/3 cup of oil

·2 whole eggs
-
·enough milk to make a batter
How to Make Hoe Cakes
- Mix all ingredients together well.
- Drop by gravy ladle onto medium hot griddle, greased lightly. A drop of water should dance across the grease.
- Cook until edges look dry and the batter starts to bubble in the center.
- Flip and cook other side.
- The original recipe called for melted lard
