To me, there is only one way to have cornbread and this is it. Most people today will say fried cornbread; however one of my great-aunts always called it Hoe cakes. I was told during "going west" these were fried on the blade of a hoe on an open fire. I don't know if it is true or if she was just pulling my leg!

Ingredients

  • - 3 cups plain white cornmeal
  • - 1 cup plain flour
  • - 3 tbls. sugar or splenda
  • - 1/2 tsp. salt
  • - 1tbls. baking powder
  • - 1/3 cup of oil
  • - 2 whole eggs
  • - enough milk to make a batter

How To Make hoe cakes

  • Step 1
    Mix all ingredients together well.
  • Step 2
    Drop by gravy ladle onto medium hot griddle, greased lightly. A drop of water should dance across the grease.
  • Step 3
    Cook until edges look dry and the batter starts to bubble in the center.
  • Step 4
    Flip and cook other side.
  • Step 5
    The original recipe called for melted lard
