hoe cakes

To me, there is only one way to have cornbread and this is it. Most people today will say fried cornbread; however one of my great-aunts always called it Hoe cakes. I was told during "going west" these were fried on the blade of a hoe on an open fire. I don't know if it is true or if she was just pulling my leg!

Ingredients
- - 3 cups plain white cornmeal
- - 1 cup plain flour
- - 3 tbls. sugar or splenda
- - 1/2 tsp. salt
- - 1tbls. baking powder
- - 1/3 cup of oil
- - 2 whole eggs
- - enough milk to make a batter
How To Make hoe cakes

Step 1Mix all ingredients together well.

Step 2Drop by gravy ladle onto medium hot griddle, greased lightly. A drop of water should dance across the grease.

Step 3Cook until edges look dry and the batter starts to bubble in the center.

Step 4Flip and cook other side.

Step 5The original recipe called for melted lard
