This is a low fat but not low in taste version of yummy zucchini bread.

Ingredients

  • 1 3/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon each baking soda and ground cinnamon
  • 1/4 teaspoon each salt and ground nutmeg
  • 1 cup packed brown sugar
  • 1/4 can each canola oil and unsweetened applesauce
  • 1 - egg
  • 1 - egg white
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely shredded zucchini
  • 2/3 cup grape nuts cereal

How To Make zucchini bread

  • Step 1
    Preheat oven to 350.
  • Step 2
    Combine flour, baking powder, baking soda, cinnamon, salt and nutmeg in a large bowl. Stir well and set aside.
  • Step 3
    In a small bowl, whisk together brown sugar, oil, applesauce, egg, egg white, and vanilla. Add to flour mixture. Mix until dry ingredients are moistened. Stir in zucchini and grape nuts. Batter will be thick.
  • Step 4
    Spray an 8x4" loaf pan with non stick spray. Spoon batter into pan. Bake for 45-50 minutes or until a wooden pick comes out clean. Cool on a wire rack.
