1 3/4 call purpose flour

2 tspbaking powder
-
1 tspeach baking soda and ground cinnamon

1/4 tspeach salt and ground nutmeg

1 cpacked brown sugar
-
1/4 can(s)each canola oil and unsweetened applesauce
-
1egg
-
1egg white
-
1 tspvanilla extract
-
1 1/2 cfinely shredded zucchini
-
2/3 cgrape nuts cereal
How to Make Zucchini Bread
- Preheat oven to 350.
- Combine flour, baking powder, baking soda, cinnamon, salt and nutmeg in a large bowl. Stir well and set aside.
- In a small bowl, whisk together brown sugar, oil, applesauce, egg, egg white, and vanilla. Add to flour mixture. Mix until dry ingredients are moistened. Stir in zucchini and grape nuts. Batter will be thick.
- Spray an 8x4" loaf pan with non stick spray. Spoon batter into pan. Bake for 45-50 minutes or until a wooden pick comes out clean. Cool on a wire rack.
