I got the original recipe from a friend and then I made a few changes to make it my own.

Zucchini bread is one of our favorites in the summertime when zucchini is abundant. This old-fashioned, simple zucchini bread recipe has the perfect balance of sweetness and spice. It's tender and forms a lovely sugary crust on top. Add your favorite nut - we opted for walnuts. They add a nutty flavor and a bit of crunch. This is a great snack or to enjoy with a cup of tea or coffee.

Ingredients For zucchini bread

  • 3 c
    all-purpose flour
  • 1 Tbsp
    cinnamon
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1/4 tsp
    baking powder
  • 3
    eggs, beaten
  • 1 c
    sugar
  • 1 c
    brown sugar
  • 1 c
    canola oil
  • 1 Tbsp
    vanilla
  • 2 c
    zucchini, grated
  • 1 c
    nuts, chopped
  • 1/2 tsp
    nutmeg

How To Make zucchini bread

  • Two greased loaf pans.

    Preheat oven to 325. Grease and flour 2 loaf pans.
  • Flour and spices sifted in a bowl.

    Sift flour. Mix flour, nutmeg, cinnamon, salt, baking soda, and baking powder. Set aside.
  • Eggs, sugar, and vanilla whisked in a silver bowl.

    In a large bowl, beat eggs, sugars, canola oil, and vanilla.
  • Slowly adding sifted flour to egg mixture.

    Stir sifted ingredients into egg mixture.
  • Mixing zucchini and nuts into batter.

    Blend in zucchini and nuts.
  • Batter poured into two loaf pans.

    Pour into loaf pans.
  • Two loaves of zucchini bread baking in the oven.

    Bake at 325 for 60-70 minutes or until toothpick in center comes out clean.
