My mom used to make this loaf quite a bit.

Ingredients

  • 3 - eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups zucchini, grated (peel, cut in half lengthwise and spoon out seeds before grating)
  • 3 cups flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 teaspoons cinnamon
  • 1/2 cup chopped nuts, optional

How To Make zucchini bread

  • Step 1
    Preheat oven to 325°. Beat eggs, sugar, oil and vanilla. Add zucchini. Add dry ingredients (and nuts if desired). Grease and flour two loaf pans (8 ½” x 4 ½”). Divide batter equally between the two loaf pans. Bake 1 hour or until golden brown.
