What a great way to use up some of the garden fresh zucchinis

Ingredients

  • 3 large eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 cups shredded zucchini
  • 2 teaspoons vanilla
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 3 teaspoons ground cinnamon
  • opt-1 cup chopped nuts (walnuts and pecans work well)

How To Make zucchini bread

  • Step 1
    Heat oven to 350 degrees F. Grease 2 large bread loaf pans and set aside.
  • Step 2
    In a large bowl beat eggs until light and foamy. Add sugar, oil, zucchini and vanilla. Mix lightly, but well.
  • Step 3
    Add the flour, baking soda, baking powder, salt and cinnamon. Mix well until blended. Add nuts if you are using them.
  • Step 4
    Pour the mixture into the loaf pans and bake for 1 hour or until a toothpick inserted in the center comes out clean. Remove from oven and let cool 10 minutes. Remove from pans and drizzle with a powdered sugar and warm water glaze. Enjoy
