Ingredients

  • 2-1/4 c
    sugar
  • 1 c
    canola oil
  • 3 large
    eggs
  • 2 tsp
    vanilla
  • 2 c
    all purpose flour
  • 1 c
    whole wheat flour
  • 1 tsp
    baking powder
  • 1/4 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 tsp
    cinnaom
  • 2 c
    shredded zucchini
  • 2 c
    frozen blueberries

How to Make Zucchini-blueberry bread

Step-by-Step

  1. Heat oven to 350. Spray 2 9" x 5" loaf pans w/ cooking spray. In lg bowl, beat sugar, oil, eggs and vanilla 2 mins. Beat in flours, baking powder, baking soda, salt and cinnamon.
  2. Beat in zucchini, fold in blueberries. Evenly pour into 2 pans. Bake 1 hr, or until a toothpick inserted in center comes out clean.
