sugar
1 c
canola oil
3 large
eggs
2 tsp
vanilla
2 c
all purpose flour
1 c
whole wheat flour
1 tsp
baking powder
1/4 tsp
baking soda
1/2 tsp
salt
2 tsp
cinnaom
2 c
shredded zucchini
2 c
frozen blueberries

How to Make Zucchini-blueberry bread

Step-by-Step

  • 1Heat oven to 350. Spray 2 9" x 5" loaf pans w/ cooking spray. In lg bowl, beat sugar, oil, eggs and vanilla 2 mins. Beat in flours, baking powder, baking soda, salt and cinnamon.
  • 2Beat in zucchini, fold in blueberries. Evenly pour into 2 pans. Bake 1 hr, or until a toothpick inserted in center comes out clean.
