Ingredients
- 2-1/4 cup sugar
- 1 cup canola oil
- 3 large eggs
- 2 teaspoons vanilla
- 2 cups all purpose flour
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnaom
- 2 cups shredded zucchini
- 2 cups frozen blueberries
How To Make zucchini-blueberry bread

Step 1Heat oven to 350. Spray 2 9" x 5" loaf pans w/ cooking spray. In lg bowl, beat sugar, oil, eggs and vanilla 2 mins. Beat in flours, baking powder, baking soda, salt and cinnamon.

Step 2Beat in zucchini, fold in blueberries. Evenly pour into 2 pans. Bake 1 hr, or until a toothpick inserted in center comes out clean.
