My family loves this bread. It's so sweet and moist. And uses up those big ole zucchini's.

Ingredients

  • 2 - eggs
  • 1 cup salad oil
  • 3 cups sugar
  • 1 teaspoon vanilla
  • 2 cups shredded zucchini
  • 1 can 8 1/4 oz. can crushed pineapple, drained
  • 1/2 teaspoon baking powder
  • 3 cups flour
  • 3/4 teaspoon cinnamon
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 1 cup chopped walnuts

How To Make sweet zucchini bread

  • Step 1
    Beat eggs, add next 5 ingredients; beat.
  • Step 2
    Sift remaining ingredients, add to previous mixture; add nuts.
  • Step 3
    Pour into 2 greased and floured 5 x 9 inch loaf pans.
  • Step 4
    Bake at 350 for 1 hour.
