Boiling the raisins is a MyMom'sMom secret~it makes the raisins better in baking. I didn't know her but she was 100% Finnish. In all my baking recipes I boil the raisins for a few minutes. Seems to keep their flavor and plumps them.

Ingredients
- 3 - eggs
- 1 cup cooking oil
- 1 teaspoon soda
- 1/2 teaspoon salt
- 1/4 tablespoon baking powder
- 2 cups sugar
- 1 tablespoon vanilla
- 3 cups shredded peeled zuccini
- 2 1/2 cups flour
- 1 teaspoon cinnamon
- 1 cup chocolate chip
- 1 cup boiled rasins
How To Make raisin chocolate chip zucchini bread

Step 1Take eggs, oil, sugar and mix well. Add the small dry ingredients and vanilla and mix well. Add shredded Zucchini and mix well.

Step 2Boil 1 cup of raisins covered in water in a pan. Place on stove top~boil them for a few minutes. Drain them add them to mix. Add 1 cup of Chocolate Chips. Add flour and mix well.

Step 3Grease 2 loaf pans or spray them~split in 2 pans. Bake at 350 ~for 50-60 minutes. Make sure to grease the bottoms really well or use wax paper.
