dee's yummy & healthier banana bread
My moms recipe for banana nut bread was very good but had both butter and shortening in it. I don't use shortening in my baking and always try to make my recipes healthier. While I still use butter (never margarine), I use 1/2 butter and half coconut oil most of the time in my baking. I find a mixture of sugars and of flours makes the end product much better tasting, with a better texture, and alot more moist than many healthier baked goods. Some of the ingredients I use may not be available to you, so feel free to substitute if need be. Give it a try and see for yourself.

Makes 8 mini loaves
Ingredients
- WET INGREDIENTS:
- 1/2 cup softened butter
- 1/2 cup coconut oil
- 1/2 cup dark brown sugar
- 1/2 cup coconut sugar
- 1 cup stevia in the raw
- 6 lg or 8 small very ripe bananas
- 1/2 cup almond milk
- 1/2 cup greek yogurt
- 2 teaspoons vanilla
- DRY INGREDIENTS:
- 1 cup coconut flour
- 2/3 cup almond flour
- 2 cups white whole wheat flour
- 1/3 cup ground flax seeds
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- OPTIONAL ADD INS: CHOOSE ANY OR ALL.
- 1 1/2 cups chopped pecans
- 1 1/2 cups dark chocolate chips
- 1 cup raw unsweetened coconut

Step 1Preheat oven to 350 degrees. line a cookie sheet with 8 mini aluminum loaf pans. Spray with non stick spray (I use coconut flavored) Cream butter and coconut oil in large mixer bowl. Add sugars and beat for 1 minute. Add bananas (I throw them in whole and let the mixer mash them while running).Beat 1 minute more. Add in eggs 1 at a time while mixer is running. Beat 1 minute more. Mix together milk, yogurt, and vanilla in a measuring cup and set aside. Stir together all dry ingredients. Add them alternately with the milk/yogurt mixture. Fold in chosen add ins and spoon batter into loaf pans. Bake for 35-45 minutes until golden brown and they test done. Brush tops with butter or coconut oil while still hot from of the oven. Enjoy!

Step 2Can be served plain or smeared with low fat cream cheese or Neufchatel cheese.
