cranberry ~ orange ~ toasting bread

This is a recipe my Mom gave me, that my Gram used to always make, when she was a kid...This was my first time making it. I loved that it wasn't real sweet, and is best served toasted with butter. I didn't add nuts to mine, only because I was fresh out. You can make a glaze, as I did with one loaf, This bread would be great with a nice hot cup of java! Enjoy!

Ingredients

  • 2 cups flour + 1/2 tbsp for cranberries, unless using dried
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 - egg ~ room temp
  • 2 tablespoons melted, butter
  • 1/2 cup chopped nuts, ~ optional, i didn't use
  • 1/2 cup + 1 tablespoon - orange juice
  • 1/3 - 1/4 cup orange zest - to your liking
  • 2 tablespoons warm water
  • 1 cup whole cranberries ( mine were froze ) i coated with flour ~ or can use dried

How To Make cranberry ~ orange ~ toasting bread

  • Step 1
    Preheat oven to 350 degree F. I used 3 mini loaf pans or can use a 9 x 5 loaf pan. Spray with non stick cooking spray.
  • Step 2
    In a large bowl, mix the dry ingredients. Add all other ingredients and stir only until all dry ingredients are blended well. I added my cranberries now too, you can always wait and fold them and nuts in last.
  • Step 3
    Spoon batter into prepared pan or pans, evenly. Batter will be thick. Bake in 9 x 13 for 50 - 55 minutes or mini pans for 30 - 35 minutes or until pick comes out clean.
  • Step 4
    When done, place on cooling rack for a few minutes, then if you like remove from pan and finish cooling.
