Ingredients
- 2 large eggs
- 1/3 cup honey
- 1/2 cup canola oil
- 1/2 cup brown sugar, firmly packed
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon instant coffee granules
- 1/3 cup cocoa powder
- 1 2/3 cups all purpose flour
- 2 cups zucchinie, unpeeled, shredded
- 1 1/4 cups semi sweet chocolate chips
How To Make choc-chocolate chip zucchini bread

Step 1Preheat oven to 350 degrees.

Step 2Grease loaf pan and dust with cocoa powder.

Step 3In mixing bowl beat on low speed the following ingredients in order given. Eggs, brown sugar, oil, honey, and vanilla.

Step 4In another bowl mix dry ingredients: salt, baking soda, baking powder, cocoa powder, flour, and coffee granules. Stir with whisk until combined.

Step 5Add dry ingredients to wet ingredients. Mix just until combined. Do not overbeat.

Step 6Add shredded zucchini to mixture. Again, mix just until combined. Do not overbeat.

Step 7Stir in 1 cup of chocolate chips by hand. You can also add nuts here if you like.

Step 8Pour into prepared pan. Top with remaining 1/4 cup chocolate chips.

Step 9Bake at 350 for 55-60 minutes or until done. Test for doneness with a toothpick.

Step 10Remove from oven and let cool 10-15 minutes before removing from the loaf pan. Let cool completely on a wire rack.

Step 11Serve as is or slather with butter, your favorite frosting, cream cheese or whip cream.
