This is any easy recipe. I created this recipe for the love of carrot cake and cheesecake. I love a great carrot cake with cream cheese frosting. I decided to make it into a bread. I love the results. It is moist and delicious. I hope you all enjoy it too.
1Grease inside of large loaf pan. Preheat oven to 350°. You may also parchment paper line as I did. grease the pan first and then line.
2Chop your carrots in a food processor. Measure out your walnuts raisins and coconut and put aside.
3Measure oil sugar and apple sauce in a bowl. Mix well with spoon. Add in the vanilla and eggs. Stir well.
4Sift the flour cinnamon baking powder and salt together.
Add to mixture to the egg mixture. stir to combine about halfway.
5Add in the nuts , carrots, raisins and coconut stir until combined. Do not over mix.
6Beat filling ingredients cream cheese etc. together. And set aside. Pour half of the bread batter into the pan.
7Pour cheese mixture over the batter. Top with the remaining bread batter. It does not have to be perfect. It is okay if some cheese shows through. Place all ingredients for streusel in food processor. Pulse until crumbly. Sprinkle over loaf. Place in oven and bake at 350° For 1 hr -
1 hr and 10 minutes, or until pick comed out clean.
Beat cream cheese and butter together. Add the powdered sugar beat well with the mixer. Add milk a little at a time. You want it to be the consistency of a bundt cake icing. Drizzle over warm bread. Cool. Let set and serve,
