I was given this recipe from a dear friend. I think it might originally have been a Bisquick recipe but I'm not certain about that. Store brand biscuit mix is much less expensive and I make this often to gift to those who have invited us to their homes for whatever reason. I never arrive empty handed.

Ingredients

  • 1/3 c
    canola oil
  • 1 1/2 c
    very ripe bananas
  • 3
    eggs
  • 1/2 tsp
    vanilla extract
  • 1 can(s)
    sugar
  • 2 1/2 c
    buttermilk biscuit mix
  • 1/2 c
    chopped nuts

How to Make Banana Bread

Step-by-Step

  1. Pre-heat oven to 350
  2. Grease pan bottom (I also flour)
  3. Mix all ingredients in a large bowl with a fork (I sift the biscuit mix so I don't get lumps) My husband prefers this bread without the nuts and I love nuts. Many times I will substitute 1/3 cup of almond meal for 1/3 cup of the biscuit mix. As for the bananas - I wait until the skins are black and the bananas are really soft because that adds extra sweetness to the bread.
  4. Beat vigorously, by hand, for 1 minute
  5. Pour into large prepared loaf pan
  6. Bake for 55-65 minutes until tester comes out clean
  7. Cool for 5-10 minutes then run knife around the edges
  8. Remove from pan to cooling rack. Cool completely before slicing
