banana bread

I was given this recipe from a dear friend. I think it might originally have been a Bisquick recipe but I'm not certain about that. Store brand biscuit mix is much less expensive and I make this often to gift to those who have invited us to their homes for whatever reason. I never arrive empty handed.

Ingredients

  • 1/3 cup canola oil
  • 1 1/2 cups very ripe bananas
  • 3 - eggs
  • 1/2 teaspoon vanilla extract
  • 1 can sugar
  • 2 1/2 cups buttermilk biscuit mix
  • 1/2 cup chopped nuts

How To Make banana bread

  • Step 1
    Pre-heat oven to 350
  • Step 2
    Grease pan bottom (I also flour)
  • Step 3
    Mix all ingredients in a large bowl with a fork (I sift the biscuit mix so I don't get lumps) My husband prefers this bread without the nuts and I love nuts. Many times I will substitute 1/3 cup of almond meal for 1/3 cup of the biscuit mix. As for the bananas - I wait until the skins are black and the bananas are really soft because that adds extra sweetness to the bread.

    Beat vigorously, by hand, for 1 minute
  • Step 5
    Pour into large prepared loaf pan
  • Step 6
    Bake for 55-65 minutes until tester comes out clean
  • Step 7
    Cool for 5-10 minutes then run knife around the edges
  • Step 8
    Remove from pan to cooling rack. Cool completely before slicing
