banana bread
I was given this recipe from a dear friend. I think it might originally have been a Bisquick recipe but I'm not certain about that. Store brand biscuit mix is much less expensive and I make this often to gift to those who have invited us to their homes for whatever reason. I never arrive empty handed.

Ingredients
- 1/3 cup canola oil
- 1 1/2 cups very ripe bananas
- 3 - eggs
- 1/2 teaspoon vanilla extract
- 1 can sugar
- 2 1/2 cups buttermilk biscuit mix
- 1/2 cup chopped nuts
How To Make banana bread

Step 1Pre-heat oven to 350

Step 2Grease pan bottom (I also flour)

Step 3Mix all ingredients in a large bowl with a fork (I sift the biscuit mix so I don't get lumps) My husband prefers this bread without the nuts and I love nuts. Many times I will substitute 1/3 cup of almond meal for 1/3 cup of the biscuit mix. As for the bananas - I wait until the skins are black and the bananas are really soft because that adds extra sweetness to the bread.

Step 4Beat vigorously, by hand, for 1 minute

Step 5Pour into large prepared loaf pan

Step 6Bake for 55-65 minutes until tester comes out clean

Step 7Cool for 5-10 minutes then run knife around the edges

Step 8Remove from pan to cooling rack. Cool completely before slicing
