This is a takeoff on mexican corn bread. It is a great addition to a Mexican buffet dinner.

  • PLACE INGREDIENTS IN BREAD MACHINE IN THIS ORDER
  • 1 cup lukewarm water (105º)
  • 1 tablespoon olive oil
  • 1/2 cup whole kernel corn, drained
  • 1/4 cup canned diced green chiles, drained
  • 1 large fresh jalapeno pepper, diced
  • 1/2 medium white onion, finely diced
  • 1/4 teaspoon lemon juice
  • 3 cups white bread flour
  • 1-1/2 tablespoon granulated sugar
  • 2 teaspoons salt
  • 3/4 cup yellow corn meal
  • 2 teaspoons ground cumin
  • 2 teaspoons dry yeast (1 package)

  • Step 1

    Pour water and oil into bread pan Add corn, onions, chiles, jalapenos and lemon juice. stir with wooden spoon to blend
  • Step 4
    Gently pour flour over liquid, Make certain flour completely covers liquid. Add sugar, salt, corn meal and cumin on top of flour Make a small well in flour/corn meal and pour the yeast into the depression.
  • Step 5
    Turn bread machine to basic with medium crust. Start the machine. Smell the tantalizing aroma wafting through your house. This bread is an attention getter at buffets, and tastes pretty darn good too.
