This is a very dense corn bread that goes very well with chili.

yellow cornmeal

baking powder
1/2 tsp

melted, unsalted butter
3/4 c
light sour cream
1/2 c
milk
2 c
shredded white cheddar cheese
1 c
sliced scallions

How to Make Cheddar-scallion corn bread

Step-by-Step

  • 1Heat oven to 350. Spray a 9" x 11" pan w/ cooking spray. In lg bowl, stir together flour, cornmeal, baking powder, salt and pepper.
  • 2In another bowl, beat eggs and sugar until smooth. Stir in butter, then sour cream and milk until smooth.
  • 3Add egg mix to flour mix, beat just until combined. Stir in cheese and scallions. Pour into pan. Bake 15 mins.
