Our Mom was from Texas, so we were eating tortillas and enchiladas before anyone else around us even knew what they were. We used to help her make these tortillas for enchiladas.

Ingredients
- 1/2 cup white cornmeal
- 1 teaspoon salt
- 1 3/4 cups flour
- 1 cup hot water
- - oil for cooking
How To Make tortillas (for enchilada recipes)

Step 1Mix cornmeal and water. Set aside and allow to cool.

Step 2Add the rest of the ingredients. Add a little flour if the dough is too sticky to roll.

Step 3Roll into thin circles.

Step 4Heat a very small amount of oil in a frying pan. Cook on both sides until brown bubbles appear. (The less oil, the better. Can also use PAM.)

Step 5Use for enchilada recipes or any calling for corn tortillas.
