Had leftover mashed potatoes and was looking for something different for lunch. This is what I came up with and it was very good.

Ingredients
- FOR EACH QUESADILLA
- 1 large quesadilla shell
- - shredded coby jack cheese
- - left over mashed potatoes
- 1-3 dash garlic powder
How To Make potato cheese quesadilla

Step 1Fold in half to get basic line and put your mash potatoes on half and using a fork smash to an even height. Add shredded cheese and sprinkle with garlic salt.

Step 2Fry in a pan until both sides are lightly brown and insides are warm and melted.

Step 3Top with your favorite jalapeño jam if desired
