Had leftover mashed potatoes and was looking for something different for lunch. This is what I came up with and it was very good.

Ingredients

  • FOR EACH QUESADILLA
  • 1 large quesadilla shell
  • - shredded coby jack cheese
  • - left over mashed potatoes
  • 1-3 dash garlic powder

How To Make potato cheese quesadilla

  • Step 1
    Fold in half to get basic line and put your mash potatoes on half and using a fork smash to an even height. Add shredded cheese and sprinkle with garlic salt.
  • Step 2
    Fry in a pan until both sides are lightly brown and insides are warm and melted.
  • Step 3
    Top with your favorite jalapeño jam if desired
