Place 1 TBSP sugar, 2 TBSP water and package of yeast in a small bowl. Let this form a foam on top.
Add remaining ingrediants to a stand mixing bowl. Attach dough hook - add yeast and flour to bowl and mix.
You can immediately roll out and shape into pocketbook yeast rolls or let stand covered with cling film to rise for a couple of hours. Then knead out and make into rolls.
