mimi's holiday wheat rolls

I have to make these rolls for every big holiday dinner. They disappear quickly. They are not very hard to do,either. They are great. I am going to try my bread machine to make the dough this year. These directions are for how I've done them for the last 25 years, by hand.

Ingredients

  • COMBINE FIRST 3 INGREDIENTS
  • 1 package yeast
  • 1 cup lukewarm water
  • 1 teaspoon sugar
  • COMBINE BUTTERMILK WITH SODA
  • 2 cups buttermilk
  • 1/4 teaspoon baking soda
  • COMBINE HONEY AND OIL
  • 1/2 cup honey
  • 1/2 cup vegetable oil
  • COMBINE REMAINING DRY INGREDIENTS
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1-1/2 cup whole wheat flour
  • 4-1/2 cups all-purpose flour
  • SET ASIDE FOR SHAPING ROLLS
  • - a small bowl 1/2 filled with a/p flour

How To Make mimi's holiday wheat rolls

  • Step 1
    Mix yeast and water with 1 teaspoon sugar, let sit until frothy. Add buttermilk,which has had the baking soda stirred into it. Combine honey and oil and stir together with all other liquid ingredients. While stirring together the rest of the ingredients put a 9 x 13 pan with a stick of butter added into the oven while it is preheating, until the butter has melted.
  • Step 2
    Combine all purpose flour, whole wheat flour, salt, baking powder. Stir liquids into the flour mixture.
  • Step 3
    Drop dough by large spoonfuls into the bowl of flour and knead each piece a few times. Dip the kneaded dough into melted butter in the pan and place into the 9 x 13 pan.
  • Step 4
    Store prepared rolls in refrigerator until ready to use and remove from refrigerator and let warm and rise. Preheat oven to 400 degrees. Bake rolls for 20 minutes, until lightly browned.
