  • 1 c
    yellow corn meal
  • 1/3 c
    all purpose flour
  • 1/2 c
  • 1/2 c
  • 1 large
  • 2 Tbsp
    corn oil
  • 1 Tbsp
    sugar or splenda
  • 1/2 tsp
    baking powder
  • 1 1/2 Tbsp
    diced red bell pepper
  • 1 1/2 Tbsp
    chopped, pickled jalapenos
  • 1 1/2 Tbsp
    whole kernel corn

How to Make Mexican Cornbread


  1. Preheat oven to 425 degrees.
  2. In a large bowl, ahisk together milk, buttermilk, oil, egg sugar, salt and baking powder.
  3. Add cornmeal and flour. Mix well.
  4. Stir in corn, jalapenos and bell pepper.
  5. Pour into a greased baking pan or greased cast iron skillet.
  6. Bake for 15 minutes or until done.
