Ingredients
- 1 cup yellow corn meal
- 1/3 cup all purpose flour
- 1/2 cup milk
- 1/2 cup buttermilk
- 1 large egg
- 2 tablespoons corn oil
- 1 tablespoon sugar or splenda
- 1/2 teaspoon baking powder
- 1 1/2 tablespoons diced red bell pepper
- 1 1/2 tablespoons chopped, pickled jalapenos
- 1 1/2 tablespoons whole kernel corn
How To Make mexican cornbread

Step 1Preheat oven to 425 degrees.

Step 2In a large bowl, ahisk together milk, buttermilk, oil, egg sugar, salt and baking powder.

Step 3Add cornmeal and flour. Mix well.

Step 4Stir in corn, jalapenos and bell pepper.

Step 5Pour into a greased baking pan or greased cast iron skillet.

Step 6Bake for 15 minutes or until done.
