We love this cornbread with enchiladas, tacos and other Mexican food.

Ingredients

  • 1 cup yellow corn meal
  • 1/3 cup all purpose flour
  • 1/2 cup milk
  • 1/2 cup buttermilk
  • 1 large egg
  • 2 tablespoons corn oil
  • 1 tablespoon sugar or splenda
  • 1/2 teaspoon baking powder
  • 1 1/2 tablespoons diced red bell pepper
  • 1 1/2 tablespoons chopped, pickled jalapenos
  • 1 1/2 tablespoons whole kernel corn

How To Make mexican cornbread

  • Step 1
    Preheat oven to 425 degrees.
  • Step 2
    In a large bowl, ahisk together milk, buttermilk, oil, egg sugar, salt and baking powder.
  • Step 3
    Add cornmeal and flour. Mix well.
  • Step 4
    Stir in corn, jalapenos and bell pepper.
  • Step 5
    Pour into a greased baking pan or greased cast iron skillet.
  • Step 6
    Bake for 15 minutes or until done.
