crispy tender tasty hushpuppies

These crispy, tender and tasty hushpuppies are bound to please everyone at your next fish fry! Always a hit at our fish fry's! This will make about 60 hushpuppies so if you aren't feeding a crowd, just half the recipe. Hope you enjoy!

Ingredients

  • - cooking oil (i used canola)
  • 2 cups plain cornmeal
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 2 large eggs, beaten
  • 1 cup buttermilk (may need a bit more)
  • 1 cup onion, finely chopped
  • 2 tablespoons hot bacon drippings (or can use hot cooking oil)
  • 3 to 4 teaspoons parsley paste (can use finely chopped fresh)

How To Make crispy tender tasty hushpuppies

  • Step 1
    Heat oil in deep fryer to 350 degrees. NOTE 1: you can use an electric skillet or a heavy skillet. Just be sure to heat to 350 degrees. NOTE 2: I used oil that I had just fried oysters in.
  • Step 2
    Combine all dry ingredients; add egg, buttermilk (may need to add add'l buttermilk), onion, and bacon drippings (can use cooking oil in place of bacon drippings), and parsley paste (can use fresh parsley finely chopped if desired). Batter will be thick but shouldn't be crumbly. Just a thick batter! Mix well; drop in deep hot fat by tea spoonful and brown on all sides. NOTE: these hushpuppies puff up so don't drop to much at a time or the centers may not cook completely.
  • Step 3
    Drain on paper towels. NOTE: Nice to divide into several bowls and set around table within arms reach.
