This is a recipe from Diamond Walnut cookbook I bought many years ago, it is in shreds now, but still readable to me, haha ~~~

Ingredients

1 c
white sugar
3/4 c
cup canola oil
2
eggs
1 c
buttermilk
1 tsp
orange zest
2 1/2 c
all purpose flour
1 tsp
cinnamon
1 1/2 c
dried cranberries
1 c
diamond of california@ pistachios
pinch of salt

How to Make Cranberry Orange Pistachio Bread

Step-by-Step

  • 1Preheat oven to 350 degrees F
    Liberally grease a 9" loaf pan with cooking spray and set aside.
  • 2Meanwhile, in a large bowl, whisk together the surgar, oil, eggs and buttermilk. Add in the flour, baking soda, salt, and cinnamon until combined. Lastly, fold in the cranberries, orange zest and pistachios.
  • 3Pour the mixture into the prepared pan and spread in an even layer. Bake for appox. 50-60 minutes or until a toothpick inserted near the center comes out clean or with moist crumbs.
    Cool completely before cutting or serving. Feel free to glaze if you'd like, but is not needed.
    I have glazed using cranberry juice w/ conf. sugar.
