How to Make Apple Scones

  1. Heat oven to 220C or 200C fan.
Put flour, baking powder and butter into food processor & give a whiz til it looks like fine crumbs (or do manually with fingers or hand blender). Add sugar and cinnamon.
Tip into a bowl, add apple and give everything a mix. (Do not be tempted to put apple through processor.. you want some nice apple chunks in your scone)
  2. Mix egg with milk. Pour into dry ingredients and stir in quickly to make a soft dough. Do not over-handle. Tip onto a floured surface; pat out to 3cm deep.
  3. Dip a 6cm cutter into some flour then cut out scones, flouring the cutter each time. Squash offcuts lightly back into a round and repeat until all dough is used up. Brush tops with a little milk then place on to a lined baking sheet and bake for 15-20 mins until risen and golden. Allow to cool on the tray.
Best served warm with blackberry jam!
